Step 1: Sourcing & Boiling A2 Milk

Our journey begins with sourcing 100% pure, A2 protein-rich milk from indigenous Gir cows, known for their superior milk quality. This milk is then gently boiled, often over traditional firewood, to disinfect it and concentrate its richness.

Step 2: Culturing in Earthen Pots

The boiled milk is cooled and transferred to traditional earthen pots, which impart natural minerals. A spoonful of curd, or 'jamavan', is added to inoculate the milk. It is then left overnight to ferment into fresh, flavorful curd.

Step 3: Churning the Curd (The "Bilona" Sanskar)

This is the most crucial step. The set curd is churned using a traditional wooden churner called a "Bilona".This slow, rhythmic churning process (Sanskar 3) separates the butterfat from the buttermilk without generating excessive heat, preserving nutrients.

Step 4: Collecting the 'Makkhan'

After churning, the white butter (Makkhan or Loni) floats to the top and is carefully collected.This fresh, pure butter is then rinsed to remove any residual buttermilk, which enhances the purity and shelf-life of the final ghee.

Step 5: Slow Simmering to Golden Ghee

Finally, the collected butter is slow-cooked in a heavy-bottomed vessel over a low firewood flame. This slow process evaporates all water and allows milk solids to settle. The result is a golden, aromatic, and nutrient-dense elixir, which is filtered and stored.
